Banana Bread

- 113g butter, softened
- 165g brown sugar
- 2 eggs
- 1 tsp vanilla
- 430g mashed banana (ripe is best)
- 210g plain flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
๐ฉ๐ณ Method
- Preheat your oven to 175°C and line or grease a loaf tin.
- In a large bowl, cream together the butter and brown sugar until smooth and fluffy.
- Add the eggs and vanilla, mixing well until combined.
- Stir in the mashed banana and mix until smooth.
- In a separate bowl, combine the flour, baking soda, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture. Mix gently until just combined (don’t overmix).
- Pour the batter into your prepared loaf tin.
- Bake for 60 minutes, or until a skewer inserted into the centre comes out clean.
- Allow to cool slightly before removing from the tin and slicing.
